Bison and Buffalo are excellent red meats, low in fat, high in protein and rich in flavour. They are naturally nutritious, tender and easy to prepare. You cook them the same way as you would any other red meat, but beware, they have a lower fat content than farmed beef and thus should not be overcooked!
