The Kudu is the queen of all Southern African antelope. It has been a source of meat for indiginous populations for generations. In recent times, Kudu biltong has become particularly popular. Biltong is salted, spiced and dried meat, eaten as a snack in South Africa.
Kudu meat is excellent - it has a lovely red colour, is tender with a medium grain and has a subtle game flavour. As with most wild and exotic meats, because it is reared in its natural environment, eating wild shrubs and plants, it is a low-fat, low-cholesterol meat, packed full of goodness and flavour.
