If the Kudu is the queen of antelope, then Wildebeest surely ranks as king! Just like other antelope, their meat is rich, red and succulent. In fact, it has the look and texture of well hung beef. It is low in fat - 97% fat free to be exact - high in protein, high in iron and low in cholesterol. Due to its low fat content, it is best cooked rare to medium rare - any more and the meat will dry out and lose its texture and flavour.
