The Wood Pigeon is the UK's most common pigeon and is found in both rural and urban areas. It can be found across Europe and Asia.
Wood pigeons are a meaty bird with a distinctive gamey flavour and rich, deep-coloured meat. They can be roasted or even grilled. Make sure you don't overcook them, however, as they will dry out quickly. Also make sure that you keep them moistened during cooking.
Whilst the Wood Pigeon is the largest of all pigeons, they are still small. One pigeon may be enough per person, but if you are serving them for a dinner party, we'd suggest you cook a few extra just to be sure!
